Opening aroma is smoked, waxy, nutty and intensely grainy; aeration adds a buttery succulence and a fruity ripeness. Entry is toffee-like, grainy sweet and honeyed; the midpalate stage is all butter, cream, smoked trout, roasted nuts, bacon fat, bacon rind and spice. Delightful finish is potent, grainy and honeyed.

Jameson 18yr Limited Reserve

Rich, Deep golden honey. The nose, muted sherry notes, aromatic oils, touch of wood and spicy, toffee. On the palate, wonderfully mellow and smooth, complex flavors of fudge & toffee spice, hints of wood & leather, gentle sherry nuttiness and vanilla. The finish is lingering, carrying notes of wood, spice & toffee to the very end.

Midleton Very Rare

Wonderful aromas of smoked trout, lead pencil, ink, dried fruit, beeswax, toasted Brazil nut and parchment. Entry is satiny, potent yet grainy sweet, and honeyed; at the fabulous midpalate the flavors include sweet grain, paraffin, salted butter, dry breakfast cereal, toffee, honey and a trace of Sherry. Finish is sublimely elegant and sophisticated.

Red Breast 12yr

100% pure pot still, triple distilled. Stupendous nose, a bit of nip and bite but the sheer brittleness of the pot still is so real and alive you feel; you could snap it in two. The malt also comes through alongside an apple-like fruitiness and a hovering trace of sherry. This is a marvelous whiskey. The pot still character gives an enormous depth and each time you taste it another facet of its make-up is spotter. A perfect after-dinner whiskey.

Tullamore Dew

Subtle, smooth and with a pleasant maltiness combined with charred wood undertones and the natural flavor of golden barley.

Powers

Powers is triple distilled in both old-fashioned copper pots and column stills. Aged 100 percent in Bourbon casks for five to six years. There is a well defined pot still rigidness on which all else hangs, but those honey notes come through strongly and fuse delectably with the spice The effect is tingling and voluptuous.

Quite rich. Starts malty, but becomes drier. More spicy. Spanish root. The flavor just keeps on developing. Finish - More emphatic spiciness and peat.

Dalwhinnie 15yr

That rarest of combinations, at once silky and malt intense and yet at the same time peppery. A hint of melon offers some fruit but the fineness of the malt reins.

Glenmorangie 10yr

One of the great malts, with the complexity of been delicate but assertive, sweet yet dry, young but oaky. Savor the fruits of the Italian garden as creamy vanilla slips like liquid silk over the tongue as peaches and cream, mandarins and lemons effervesce in the mouth.

Glenmorangie Quinta Ruban

A caress of silk velvet on the tongue gives way to a swathe of rich, dark chocolate-enrobed walnuts leaving in their wake the lemony-rose jelly texture of Turkish delight. Then sugar-coated crystallized orange segments emerge, countered by crisp mint chocolate, adding chiffon like texture.

Definitely Ardbeg on the taste with peat, seaweed bonfire smokiness. Crispy smoky bacon, maple syrup and antiseptic lozenges leave a peppery and oily feel on the palate. Sweet and fruity flavors of ripe autumn fruits and chocolate limes emerge as notes of black coffee, liquorices and reminders of parma violets linger in the background.

A soft, sweet and spicy Islay peat smoke greets you when you first open the bottle. The immediate taste is an oak sweetness, from 18 years in the barrel. A faint hint of the sea can be detected, testimony to its time maturing on the remote island of Islay. An instant warming tang of smoke fades into smooth floral scents, which blends seamlessly into an oaky nuttiness and leaves a lasting sweetness on the taste. With a touch of water, the peaty warmth fills the mouth but does not overshadow the sweet chocolate smoothness. This is balanced by the rich toffee taste and slowly fades into a delicate hint of heather and peat smoke. Full bodied, long with a luxurious oily smoothness.

Laphroaig 21yr

Beautiful notes of quinces and passion fruits topped with fresh crushed mint leaves, then more camphor and eucalyptus before it gets hugely maritime. Seaweed, sea air, sea water... Some delicate toffee notes as well. Hints of new oak, maybe there was some fresh bourbon involved. Goes into many consecutive directions, with leathery/earthy tones, classic peat, spices (cloves and pepper), salt and bitter oranges, juicy fruits (tangerines, mangos).

Auchentoshan 3-Wood

The Three Wood is intense, sweet and complex with a rich golden bronze appearance. It has a blackcurrant, brown sugar, orange, plum and raisin aroma with a fruit and syrup taste. The finish is fresh and fruity with long lasting oaky sweetness.

Auchentoshan 21yr

Soft, sultry malt with a thoughtful sprinkling of oak with a degree of citrusy.

Orkney Islands

Highland Park 12yr

Made from the best barley malted over peat fires; merged with the unique spring waters of the island; and aged in casks for a minimum of twelve years that shape its rare and very distinctive character.

Highland Park 18 Year Old is an exceptionally fine whisky that builds on the world-class reputation already enjoyed by the 12 Year Old, added to which the rich, mature oak makes truly smooth and satisfying malt.

Scapa 16yr

A crisp clean lemony touch, oranges, spice mix for mulled wine. Also apple compote and something clearly caramelly and roasted (well, caramelized peanuts) that reminds us of some blends. Finish: medium long, with the oak kicking in, making the whole a little drying. Quite some pepper and a little salt plus a little mint.

Speyside

Aberlour 12yr

Has the aroma of honey, oak and aniseed candy with a strong bourbon style kick.

Aberlour 16yr

This 16 year-old has been double-matured in traditional oak and sherry casks. Deep and complex, with lip-smacking spices.

The Balvenie 15yr

The Balvenie Single Barrel is 15 year old single malt which is drawn from a single traditional oak whisky cask of a single distillation. Whilst each cask is subtly different, The Balvenie Malt Master selects only those casks which have the essential characteristics of The Balvenie Single Barrel, particularly honey, vanilla and oaky notes. Each bottling forms a limited edition of no more than 350 hand-numbered bottles - so each bottle is unique and unrepeatable.

The Balvenie 17yr

The Balvenie Madeira Cask was aged exclusively in traditional American oak whisky casks before being transferred to barrels previously used in the production of fortified Madeira wine. The deep, luxurious aromas translate into an equally rewarding flavor. Initial sweet vanilla oak notes gradually develop into rich spices and dried fruits (apricots, figs, dates).

The Balvenie 21yr

To create The Balvenie PortWood Aged 21 Years, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines. A rare refill sherry hogshead of 18yr old Macallan, a rich gold in color with long legs and excellent beading. At first, a mild nose of bruised apples then baked apples and brown sugar. At natural strength this is hot! Plenty of coconut, rich spices and mild licorice. The mid-palate brings shows an oiliness with caramel, burnt orange peel and some lovely floral notes. The finish is fennel and licorice, mouth filling with chocolate and aniseed lingering.

Is specially blended to recreate the authentic character and taste of some of the earliest whisky blends created in the 19th century, giving it a rich, peaty taste combined with a smooth, distinctly malty flavor. Specially selected from some of the finest and rarest of the Walker Reserves, each individual whisky used in the creation of The Blue Label blend is matured long in its cask until it reaches the peak of its perfection. Few whiskies are allowed the time to acquire such depth and complexity of taste.
